The origin of Shiitake 

Lentinula edodes, or commonly known Shiitake, is one of the most popular and widely cultivated mushrooms in the world. It is valued for its delicious, savoury flavour and a great variety of health advantages. Shiitake mushrooms are mostly grown in Japan, China, and Korea in the Far East, from early spring to late summer or early fall. Lentinula edodes has a long history of usage in Chinese traditional medicine. In the Eastern cultures it is said to promote health and longevity as well as circulation.

They have proved effective treatments for several tumour types, including sarcomas and certain tumours of the rectum and large intestine, likely because of their capacity to trap free radicals. β-Glucan, lentinan, and the KS-2 polysaccharides promote the well-known immune-strengthening action of Shiitake. Lentinan’s anticancer properties were first noted in the 1960s.

Lentinula edodes, like other medicinal mushrooms containing immunologically active polysaccharides, has the ability to boost immune response to a variety of viral diseases, including influenza, HIV, and hepatitis.
